DID YOU KNOW THAT…? That’s why the Baci di Dama (“Lady’s kisses) are so called

Imagine to come in the kitchen of the Royal Savoy family and finding a cook who is busy among the bowls, mixing a dough, intent on finding the right alchemy among the ingredients to satisfy the request of King Vittorio Emanuele II to invent a new dessert, with a different taste and shape from those already known.

According to legend, the “baci di dama” (“lady’s kisses”) was born this way, in the autumn of 1852, and the king liked them so much that they were soon served on the royal tables of the rest of Italy and Europe.

The real history – which is always less fabulous than the legend – identifies the true birth of “baci di dama” in a pastry shop in Tortona, a little village in the province of Alessandria.

The reason of such a particular name lies in the shape and composition of the sweet: according to a first version, the kiss would be that which the two small and “bellied” biscuits romantically share to remain united, held together by a greedy layer of chocolate.

A second interpretation, on the other hand, is that the name derives from the fact that the shape of the dessert suggests that of the lips of a tender girl intent in a kiss.

Originally the recipe involved the use of hazelnuts; the cavalier Stefano Vercesi modify the original recipe with almonds. The “baci di dama” were thus presented at the Milan International Exhibition in 1906 and were so appreciated that they won the gold medal, the highest recognition of patisserie of the time.

The recipe for “baci di dama” as we know it today was patented in 1919 by pastry chef Pasquale Balzola and his son Rinaldo (personal pastry chef of the king of Italy Vittorio Emanuele III from 1932 to 1938).

The “baci di dama” are biscuits included by the Ministry of Agricultural, Food and Forestry Policies in the PAT (Typical Agri-food Products) category.

MOSCOW (RUSSIA) – Internationalization is a real vocation for the company Delli Paoli, Guida and Associated, which is expanding its commercial horizons in numerous countries of the world with “Positano Forno e Cremeria”.

After the advantageous participation at the ISM exhibition in Cologne (of which we wrote HERE), the sweet moments of delight of “Positano Forno and Cremeria” moved to Russia, arriving in a beautiful stand of the Prod Expo 2019, held in Moscow from 11 to 15 of February.

In a context of mutual exchange with the other companies present, Delli Paoli, Guida and Associated took another opportunity of international caliber to be known and appreciated by specialized operators from all over the world, who expressed great interest in the products of Italian pastry.

In Russia, “Positano Forno e Cremeria” managed to give one of his most memorable moments of delight to the Italian Minister of Agricultural, Food, Forestry and Tourism Policies Gian Marco Centinaio. The minister took to the Pavilion “The Extraordinary Italian Taste” of the Prod Expo exhibition on the occasion of his two-day visit to Russia, aimed at consolidating institutional relations with the Kremlin representatives, meeting entrepreneurs and exponents of the business community Italian and visit, in fact, the Prod Expo fair, the largest exhibition in the food, beverage and raw food products sector in the Russian market.

The minister and the Italian ambassador in Russia, Pasquale Terracciano, tasted the specialties of “Positano Forno and Cremeria” while Fabio Delli Paoli explained their objectives and international prerogatives of the company.

The most important international event in the sector

 

COLONIA (GERMANY) – A new entrepreneurial step, but with many years of hard work in the commercial sector: that of Fabio Delli Paoli, Gianpaolo Guida and associates is a reality that starts from Marcianise (in the province of Caserta), where the company has its “headquarters”, but daily develops its natural vocation to internationalization.

Never stationary in the work but always facing the international horizon, the Delli Paoli, Guida and Ass., comes from a new and important experience, namely the participation in the ISM exhibition, which took place in Cologne, German, where it presented itself for the first time as a nascent company in the panorama of so-called “impulse products” and obtained excellent feedback for the attention paid to the specialties of Italian pastry.

The Ism exhibition, no doubt the most important international event in the sweets and snacks sector (together with the biennial exhibition Anuga, which is always held in Germany), represented for Delli Paoli, Guida and Ass. the opportunity to get to know and be known by specialized operators from all over the world: great interest in “Positano Forno and Cremeria” products was expressed by representatives of the Anglo-Saxon market, the German and Spanish markets, as well as by operators from the East and the Middle East.
